Project formed by Innovi as group coordinator, Distillery Branda as leader, Mas Llunes Vinyes i Cellers and Coca and Fitó as members of the Consortium and the URV as a research center.

The main objective of the present project "New traditional Catalan distillates of Brisa" is to revaluate the by -products of the winemaking process, especially the breeze breeze, through the creation of high quality artisan distillates in Catalonia. The region currently has a limited production of this type of distillate, and the project seeks to take advantage of its economic and cultural potential, contributing to the prestige of Catalan wines.

Through the collaboration between wineries, universities and experts, the project will develop innovative fermentation and distillation protocols, as well as monitoring and control systems to guarantee the quality of the final product. In addition, a Roadmap will be designed that facilitates the transfer of knowledge and industrial implementation.

Thanks to this, the project promotes the circular economy, the sustainability and the recovery of wine traditions, by positioning Catalonia as a benchmark in breeze distillates with their own identity.
